Totally chocolaty, Baileys laced milk and white chocolate chunk chewy cookies with boozy Baileys hot chocolate topped with whipped cream and grated chocolate. The perfect combination for a cold wintry night. These cookies are very sinful indeed, not only are they loaded with chocolate chips, chocolate chunks and rich chocolate cocoa, there’s also a big cheeky glug of Baileys Irish cream for that extra bit of luxury.
Christmas Food Overload
Who else is still eating their way through the Christmas food stash? I certainly am, even people at work have been bringing in their goodies by the box load to offload the latent calories hanging round the house. I’m not complaining; however, I really do need to make some room in the cupboards for some healthier food items. Every year we always end up with lots of chocolate and Baileys left over, so this seemed like the perfect recipe to use them up.
All the Chocolate
I stumbled across this recipe when looking for inspiration. It’s from one of my favourite bloggers ‘Gimme some oven.’ The only difference is that I added extra chunks of Galaxy chocolate (I’m determined to cram as much chocolate in these as possible!).
This recipe yielded 30 cookies when we made them, the original recipe states 30 – 40 so I guess we made ours a little bigger than …… These were incredibly easy to make, all ingredients added into a bowl and whizzed up to form a dough. Refrigerate for approx. 30 mins, roll into balls and place on greased baking parchment on a tray and bake for 10 mins. The result is a rich chocolate cookie that’s crisp round the edges and chewy in the centre. It’s almost like a cross between a cookie and brownie, what a great combination!
These cookies alone are perfect, however imagine a big mug of creamy hot chocolate with a big glug of Baileys liqueur mixed in and topped with whipped cream and grated chocolate to dip the cookies in! Sound good hey? Well that’s because it is and exactly how we enjoyed our cookies. This is a great treat for cosy night in on a winters night. In fact these would be great to make to celebrate St Patricks day too!
These cookies are super delicious; however, I think 30 may be a little excessive for just the two of us. If anyone in the Manchester area knows of somewhere we can donate the food we make and would accept it, it would be great to know. We love experimenting with recipes but absolutely hate food waste. Bailey's Chocolate Cookies
Totally chocolatey, Baileys laced milk and white chocolate chunk chewy cookies with boozy Baileys hot chocolate topped with whipped cream and grated chocolate. The perfect combination for a cold wintry night.
Ingredients
- 1 cup butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2 2/3 cups flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 tsp. baking soda
- 1/4 tsp. salt
- 8 Tbsp Bailey’s Irish cream
- 1 cup white chocolate chips
- Chunks of Galaxy chocolate (optional)
Directions
- Step 1 In a bowl whisk together the flour, cocoa powder, baking soda and salt until combined.
- Step 2 Using an electric mixer, use the paddle attachment to cream together butter, sugar, eggs and vanilla until fluffy.
- Step 3 Add in the Baileys Irish cream one tablespoon at a time, scraping down the sides of the bowl if needed to be sure that everything is well combined.
- Step 4 Add the dry ingredient mixture, and continue mixing until combined. Fold in chocolate chips. Refrigerate dough for at least 2 hours.
- Step 5 Roll or scoop into balls and set on a greased baking sheet. Bake at 350 for 8-10 minutes. Remove and carefully transfer cookies to a cooling rack to cool. Keep remaining dough refrigerated until use.
