Smoked Salmon and Cream Cheese Topped Rice Cakes

Slightly salted, crisp rice cakes smothered with creamy garlic and chive low fat cream cheese topped with layers of oak smoked salmon, slithers of red onion, a squeeze of lemon, a few salty capers and a sprinkle of chopped dill all garnished with slices of pickled cucumber. (I added a little caviar on mine too…. well why not, a little extravagance on a Tuesday never hurt anyone ;)).

I absolutely love these as a light lunch or supper. Super healthy, no cooking involved and totally delicious!

At the moment we are renovating our apartment which means the kitchen is out of bounds most evenings, which is not great for me. I’m really missing my evenings spent in the kitchen whipping up a nice hot dinner whilst listening to my audio book (my little haven).

Perfect no-cook supper

However, the apartment needs doing, so after exhausting the entire options on Deliveroo (and believe me, there’s a lot of choice in Manchester!). I decided to opt for a no cook, healthy alternative that is still delicious. One thing I won’t compromise on is taste. So where else would I head for inspiration… Pinterest of course! That’s where I saw these tasty morsels.

Super quick and versatile

They’re perfect, you literally buy the ingredients, do a little chopping and assemble, et voila, a quick, healthy and delicious dinner . My idea of the perfect dinner. What I also love about this kind of dinner is that you can create different combinations of toppings. I’ve listed a few ideas below.

Healthy and filling

I had two of these and they were more than filling for me, but you can make as many as you like, Dean had four but boy, can that guy eat! Next time I would probably serve these with dressed fresh green salad and maybe a few cherry tomatoes for colour.

Other alternatives

  • Hummus, cooked ham and chopped cherry tomatoes
  • Cream cheese, pickled cucumber, dill and chopped red chili
  • Peanut butter, apple wedges and a drizzle of honey or dark chocolate melted and drizzled or grated
  • Spicy sweetcorn relish, chargrilled sweet red peppers, chopped spring onions
  • Peri peri mayonnaise, Cajun spiced chicken and a drizzle of Smokey chipotle sauce
  • Nutella and fresh sliced strawberries and sliced banana
  • Greek yoghurt, fresh berries, honey and crushed pistachio nuts
  • Melted mozzarella cheese, sundried tomatoes and green pesto
  • Guacamole, chunky tomato salsa, jalapenos and grated cheese
  • Peanut butter, mashed banana, crushed walnuts, and a sprinkle of cinnamon
  • Hoisin sauce, crispy shredded duck, finely shredded spring onion and cucumber
  • Camembert cheese, roast figs and a drizzle of reduced balsamic vinegar dressing and rocket leaves

The combinations are endless! I would love to hear your ideas. I think we will be eating a lot of rice cake suppers for the next few weeks!

A super quick and healthy lunch or supper dish of rice cakes topped with cream cheese, smoked salmon, capers, dill, lemon and pickled cucumber

Ingredients
  • 1 Pack smoked salmon
  • 1 Pack of rice cakes
  • 1 Jar capers
  • 1 Lemon
  • Half of a cucumber
  • 1 Red onion
  • 1 Bunch of dill
  • White wine vinegar
  • 1 Tub of garlic and herb cream cheese
  • Pinch of salt
Directions
  • Step 1 Spread a layer of cream cheese onto the rice cakes
  • Step 2 Arrange slices of smoked salmon on top
  • Step 3 Slice red onion finely and place on the salmon
  • Step 4 Sprinkle on some capers
  • Step 5 Add a squeeze of lemon juice over the salmon (optional)
  • Step 6 Finely slice cucumbers and allow to stand in white wine vinegar with a pinch of salt and a tablespoon of sugar (alternatively use pickled gherkins)
